Cheddar Broccoli Soup
Winter isn’t quite over yet, and I know of no better comforting side dish than Broccoli Cheddar soup. I consider this a side dish only because it’s lacking the protein you might need for a complete meal. You can add some protein by topping it with more bacon, tossing in some grilled chicken, or even some ground beef.
Take care to remove the soup from heat before stirring in the cheese, so that the cheese doesn’t separate. It also helps to let the shredded cheese come to room temperature before adding it to the soup.
As for cheese preferences, I like to use a combination of mild and sharp cheddar, but you can choose according your tastes. Also, the cayenne gives just a nice kick of heat. Some folks will want to add a bit more while others might want to omit it altogether.
Make it any way you want, but make this soup!
