Recipe | Deconstructed Breaded Zucchini

Clearly I am watching too much Top Chef. Because everything on Top Chef is deconstructed, right? You can’t argue with the fact that breaded zucchini is awesome. So why deconstruct it? Well, because breaded zucchini is a huge hassle to make what with the egg on the hands and the breadcrumbs under the fingernails. And painstakingly dipping each little zucchini round into egg and then breadcrumbs takes a lot of time too. Deconstructed breaded zucchini is breaded zucchini for those of us who are short on time, lazy, or a little bit of both. While the onion might not be included in the original version, I threw it in because I had it on hand and I like sauteed zucchini with onions. So why not? This might not be quite the same as breaded zucchini, but it does take half the time (and effort!), which is a big plus in my book.

Besides the bread, everything is fresh in this Italian salad! Prepare it using country bread or ciabatta bread from the day before. If your bread is too fresh, you can grill it a little bit so that it’s as dry and crisp as a crouton.

#3 – Keep Your Laptop OFF Your Lap. While the name is deceiving, it radiates harmful EMFs whether it’s connected to a power source or not. And if you do use it on your lap, check out the EMF protectors available to put under your device to protect yourself.

#4 – Get in touch with Nature. Grounding, or earthing helps promote better sleep, more energy, quicker healing, reduced aches, and discomforts. Plus, it’s been shown to normalize your stress hormone, cortisol.

Patagonia is the ultimate fantasy for any traveler. In the Argentinian part of Southern Patagonia, the national park of Los Glaciares has a massive power of attraction over international trekkers. The mountain village of El Chalten is the starting point of some of the most breathtaking hikes in the park. This Thai Red Curry with asparagus and tofu is simply amazing and is so easy to make. Better still, you can serve it with rice noodles or over rice. It’s terrific with both white rice (we recommend a nice jasmine rice for this dish) or brown rice. You really can’t go wrong.
